We endorse natural wine, sustainability and good times for all!
This informs everything we do. From the menu to the wine list to the cocktails and everything in between. Everything is curated with a focus on the authenticity and the passion behind the raw product. We serve in a buzzy, energetic environment where a romantic couple can disappear into the crowd or a group can revel in the good vibes.
Plateau is open 4 days a week from 12 every day until 6:30 week days and late weekends
We put a great deal of energy, time & tasting into compiling our wine list. Organic, biodynamic & above all natural wines are focussed on because these reflect our ideology: ethical farming, sustainability, & quality. It is because of this that natural wines tend to be made in small quantities by an artisan or independent producers. These producers tend to work without chemicals in low yielding vineyards & then vinify without artificial yeasts or enzymes, or recourse to acidification & other adjustments. Many of our wines are made with only a tiny amount of additional sulphur, & some with none at all.
The motivation is to rediscover the true essence of the wine by capturing the sense of place (terroir) & the very nature of the vintage. Moreover, these wines are unpretentious, tasty & fun to drink.
We love to share our passion with family, friends & our guests by hosting regular wine tasting events & discussions. Check this website or our facebook page for details of the latest events.
Finally (& we think very importantly!), we store & serve our wines at a temperature that ensures that they are at their best. Our wine list changes weekly with exciting new additions, new vintages & tasting notes in an easy to understand format.
We offer more than 20 wines by the glass on a frequently changing basis, including some rare treats from producers that are very hard to find.

Sustainability is the key element in our menu. All our dishes focus on the seasons and produce is sourced from a few biodynamic farms in our area. The menu changes daily based on what is available from our favourite day boats, game hunters, butchers and foragers.
The menu is designed around the idea of sharing and options abound. Our small plates are perfect for a snack at the bar while exploring the wine list, or perhaps as a series of dishes enjoyed family style. Plates are slightly larger and designed to focus on a key element, perhaps some locally caught fish, or some local biodynamic produce. Large plates are for those who want to tangle forks with their companions and be shared between the whole table.

We have united the strongest & most passionate team of bartenders in Brighton to mix up a fine selection of mixed drinks.
Our philosophy is that quality ingredients make quality cocktails, & we try to use only the best, including freshly squeezed citrus, small batch liqueurs, a superior range of vermouths & a unique collection of spirits from around the world.
The cocktail list is defined by classic cocktails, as we feel that this is something often overlooked in contemporary cocktail bars.
We have chosen to list only a small selection of drinks, however, if you a cocktail that isn’t listed, please ask, and if we have the ingredients, we will make the drink with pleasure.
